Pecorello di Pecoraro is a natural wine that offers a truly distinct flavour. The grape undergoes a lengthy seven month fermentation in qvevri georgian amphoras, resulting in a balance between fresh acidity and texture. The traditional simplicity of the maceration process creates a flavour profile that commands respect akin to the matriarchal Nonnas of the culture.
